Polenta with Bolognese Sauce.

I made Polenta with Bolognese sauce for the first time last night and it was delicious! I love all things food (you could tell by my package from Amazon today), if I could make a living cooking, writing about cooking or entertaining I would have the perfect job!

I was watching Food Network over the weekend, the show, The Best Thing I Ever Made. Chef Michael Chiarello made a polenta and bolognese sauce (a quick version). I used that as my jumping off point and went from there.

I used one cup of polenta into 4 1/2 cups of water. Cook according to package.  I added a splash of heavy cream, fontina, pecorino romano, tablespoon of butter and freshly grated nutmeg (next time I'll add a bit more). It was creamy and a lovely pale yellow!

For the bolognese sauce I started with cubed pancetta (already purchased like that I think a 4 oz package) and got that nice and crispy, add 1/2 an onion until they are soft, two cloves of chopped garlic, a small packaged of porcini mushrooms that I reconstituted and chopped,  cook that  for a couple minutes. I added about 1/2 cup of white wine to deglaze the pot. When that cooks down I added one 28 oz can of tomato puree. Then some chicken base, pepper, and few red pepper flakes. I cooked for about an hour and then added pecorino romano at the end.

Spoon the bolognese over the polenta and enjoy! This sauce would be wonderful over fresh pasta too!

You know how the Amazon box has a smile on it? I smiled when I saw it on my porch today! I got Ina's, Fool Proof and Daphne Oz's new book, Relish. Both beautiful and I'm enjoying going through them.  I would love to write a book, is that crazy?

Chicken Broccoli Cheese Pockets

I saw this recipe on the chef in training site and thought my family would like it. Since we have a family of five I used three pie crusts , more chicken & broccoli which made six pockets. I left out the corn. Next time I would omit the butter completely, the pie crusts are rich enough and I don't think you really need it. I added shredded cheddar as I love broccoli and cheddar together!








This was really quick and easy to put together especially if you use a rotisserie chicken.

Cinnamon Breakfast Pizza

I saw this recipe on Jenny Steffens blog and thought the kids would enjoy it (me too). I almost always have pizza dough in the freezer so I thawed it in the fridge last night and made them for breakfast today.

One dough ball made 6 little pizzas. I melted the butter and brushed it on so I got every little piece of the dough. Sprinkle with brown sugar and bake. I had to bake mine a bit longer than the 10 minutes probably 13-14. Just keep an eye on them. Drizzle with your icing and enjoy!

Salted Chocolate Carmel Pretzel Brownies

 I made these blondie brownies today. I thought I'd share the link to the recipe and some photos before they are gone!



I substituted toffee bits for the caramel since that's what I had in the pantry.

The kids loved these, me too!
